Q1 The First Step: FINEPRINT started as a small spot on Peel Street. When things got 'chaotic' in the early stage, what was the one belief that kept you walking into the shop every morning?

S: I have always said to the team: if our systems are tight, we can handle things when we get slammed. If they're not, when we do get slammed, we’ll lose the plot and make a mess of things. Those systems gave me confidence that we could handle things when chaos hits.

In those early days, when we had one and then two shops, I had to work in the shops to ensure we created the culture I wanted. There was no question in my mind –I had to be there.

Q2 The Standard & Consistency: In fashion, a garment is defined by the quality of its stitch. What is the ‘FINEPRINT ' (the small, often overlooked detail) that makes a coffee or a loaf of bread move from just 'good' to 'exceptional’? What keeps you walking ?

S: The ‘stitch’ in F&B, I believe is in the ingredients combined with sticking to your guns and maintaining your conviction. It’s easy - and often done in the early days – to get scared of a negative bottom line and compromise quality by cutting corners with ingredients. When you do this, you also compromise the top line. Stick to your guns, trust the product you know, love and want to serve. Eventually, the growing top line will turn the bottom line positive.

Q3 The Uniform: ONS designs 'Urban Essentials' that work from a morning meeting to a late dinner. What does a 'Urban Essential’ day look like for you? Give us brief breakdown from waking up to that first sip of coffee and stay focus on your plan .

S: I wake up, put the kettle on, and throw on a comfortable jumper to relax while I enjoy my first coffee of the day. Most days, it’s jeans and a t-shirt, with an occasional linen shirt if I want to look a bit more like a boss or have dinner plans. I like clothes that fit well and look good.

Q4 The Neighborhood Hook: ONS starts at 'One Nice Shirt,’ a curated place that filled with clothes & accessories fit for modern lifestyle. "FINEPRINT" has become a cornerstone of the HongKong community & Xiaohongshu ( RED) influencers' spot. What is one thing you want every person to feel the second they step off the busy street and into your shop?

S: When someone walks into a FINEPRINT, I want them to think: “There’s something different about this place compared to other cafes. I can’t quite put my finger on what it is, but I love it.”
